Tinwood Dinner Series – March

We are very excited to announce that our Roots catering team will be guest chefs at the next Tinwood Dinner Series on the 5/6/7 March.

Enjoy a four-course menu specially curated by the Roots team paired with a range of Spanish and Portuguese fine wines.

This event is made even more special as Mariella’s brother Art Tukker is the founder and owner of Tinwood.

Mariella will be taking a role in the kitchen during the Dinner Series alongside Executive Chef Dan Clarke, Krystal Bishop and Rachel Burroughs.


Amuse Bouche – Mariella Fleming, Owner Southend Barns & Roots

Cappuccino of beetroot soup, Sussex goats’ cheese, beet crisp

Starter – Rachel Burroughs, Sous Chef

Seared Cornish scallop, textures of cauliflower, sweet & sour apple, Apple gel, chive, almond and lemon oil

Main course – Krystal Bishop, Head Chef

Sussex lamb three ways…

Herb crusted loin of lamb, shepherd’s pie tortellini, lamb cutlet lollypop, pancetta, peas and gem lettuce, parsnip purée, Jus

Dessert – Dan Clarke, Executive Chef

Warm fig, orange & almond tart, Passionfruit and Yuzu curd, poppyseed meringue, Pannacotta, Orange marmalade ice cream
